we’re obsessed with our craft. we offer a unique and sustainable fish-dominant menu. we age each whole fish as a butcher would a fine cut of meat, and treat it with the same distinct respect. our ever-changing chalkboard menu allows us the unique joy to treat you to a new experience every visit. this bespoke style of seafood dining invites you to explore the possibilities and enjoy a new and refreshing experience in central ottawa.

family first

our space is the brainchild of renowned chef Alex Bimm, prominent restaurant manager Eric Bimm, and top mixologist Sophie Bertrand. the seed of Le Poisson Bleu was planted by childhood dinners around our beloved grand-maman’s table and her unparalleled ability to connect friends and family through food. it has long been our dream to honour and recreate the élan, independence, and spirit of cultural exchange she exemplified and passed down to us.

chef Alex Bimm has cooked in some of the finest restaurants in the region including Les Fougères and The Whalesbone on Bank. in 2019, he was part of Les Fougères’ gold medal-winning team at the Canadian Culinary Championships in Kelowna. he strives to create food that is bright and memorable, sophisticated yet unpretentious, comforting and full of heart. when he is not in the kitchen, you can find him playing ping-pong, biking in the Gatineau hills, or curled up with his cat Gon next to the record player and the latest Legend of Zelda.


  • Sophie Bertrand

    head bartender + owner

    a Montreal-based mixologist, Sophie is first cousin to Alex and Eric Bimm, co-owning alongside. Sophie spent several years managing bars within the Barroco Group in Montreal, including Atwater Cocktail Club, Milky Way, and Fugazzi. her reputation precedes her as she creates fun and nostalgic cocktails with the finest ingredients, and boasts a heavenly collection of rare and familiar spirits on our backbar.

  • Eric Bimm

    restaurant manager + owner

    growing up with his younger brother Alex in the small culture hub that is Wakefield, Quebec, Eric is a well-rounded and experienced restaurant leader. with over 20 years of professional hospitality experience including chef positions, restaurant management, retail, and supply. Most recently, Eric spearheaded Whalesbone Sustainable Seafood’s supply chain before opening Le Poisson Bleu with his family.
